I mentioned on the blog that I recently had my birthday. I wanted to share with you my birthday dessert. It’s quick, easy and it has gelatin in it. I’ve come to prefer this dessert to a cake, I like it so much.
Gelatin is a wonderful food to include in your diet because just like the gelatin in homemade bone broths, it soothes your stomach and nourishes your body. The best gelatins are the high quality ones such as Great Lakes or Bernard Jensen that are from grass-fed cows and processed at low temperatures. They act and work just like other gelatins, but they’re a much better quality.
I like this recipe because I can use it to get gelatin into my kids in an easy way that makes them happy. The nutrition in the gelatin combined with the fat in the coconut milk or cream makes this a satisfying dessert. Since most desserts are light on the fat and high on the sweetener, this is a great way to have a healthy dessert that feels like a treat but still has good nutrition in it. Panna Cotta beats jello any day and is far more filling than the sugary, store-bought options with only a few minutes work.

1 pound strawberries, stems removed
2 cups full-fat coconut milk or cream, divided (you can use dairy cream if you aren’t dairy-free)
2 Tbs high quality gelatin
1/4 cup water
Sweetener to taste- raw honey, stevia or the like
In a food processor, place the stemmed strawberries and all but a half-cup of the coconut milk and process until smooth. Set aside.
Place the water in a saucepan and sprinkle the gelatin over the top. Allow to sit for 5-10 minutes or until the gelatin is softened. Whisk in the remaining 1/2 cup of coconut milk and heat over high heat, whisking constantly, until the mixture comes to a boil. Remove from the heat.
Pour the gelatin mixture into the food processor and process until smooth. Add your sweetener to taste and process until well distributed. How much sweetener you need will depends on how sweet your strawberries are.
Pour into a serving dish or multiple ramekins. If you’re serving this do company, you might want to take a spoon and gently skim any bubbles off of the top to make a nicer presentation. Cover with plastic wrap and chill until firm, about 4 hours.
If you’d like, you can serve this with whipped cream or even whipped coconut cream. It is a rich dessert, so small servings are best.

This sounds delicious – I am always looking for recipes to use my grass fed gelatin in!
I made this tonight and it is delicious! I used half homemade coconut milk and half heavy cream. We topped it with fresh raspberries and blueberries – so good!
