Amanda Rose recently discovered some fascinating research. Using dairy as a soaking medium actually inhibits the break-down of phytic acid!
Amanda told me about this last week over the phone. It’s definitely had an effect on how I prepare my grains. It’s much more freeing. Her new website, which I recently previewed, has a lot of videos and tutorials on how to soak grains, beans and nuts for maximum phytic acid reduction. This is an awesome resource and I recommend you go check it out. I’ll be writing up a full review of her new white paper and site on Friday, including a good bit of info on how I’ve changed my own cooking practices and freed myself from some extra kitchen work as a result of Amanda’s research.
