Hi, I just listened to the podcast today and have a question. You mentioned that if you don’t store grains or beans, you have to make up the calories with meats, veges, fats, etc. How do I figure out how much to store? Is there a place that says how many calories/nutrients are in a lb of beef, or green beans or squash, or is there an easier way (maybe for every 10 lbs of grains store an extra 5 lbs meat and 6 lbs veges or something)?
I’m not sure what the easiest way to convert your Real Food Storage book to paleo would be.

I have a quick question that maybe you can address on one of your podcasts. In general, I am trying to educate myself about safe cookware. I have switched to cast iron for most things, but I’m stuck at what to use for a crock pot. I am hoping to get a big crock pot, at least 4 quarts, so that I can more easily have a perpetual stock going, and haven’t trusted major brands who say they are lead free because the FDA as I understand it just as it does with trans fats allows the label “lead free” even if there is a certain, what they deem “small” amount. I plan to cook a heck of a lot it in and don’t want to run the risk of lead contamination over time. Have you educated yourself on this? Do you have any words of wisdom? Right now I am investigating make-your-own hayboxes where I can use cast iron, but am not sure that will hold the temperature long enough to let it go safely overnight which I would need to do for stocks brewed over days.
