Yesterday, there were some questions in my inbox from folks wanting to know exactly what I’m eating. So I figured I’d blog it to give you an idea.
Thursday’s brunch was two eggs fried in coconut oil and a quart of raw milk. Now, I normally don’t drink that much milk at one sitting, but the new milk had come in and we were out of room in the fridge, so I poured the last of the previous batch into a mason jar and drank on it throughout the afternoon. I don’t want to pour liquid gold down the drain.
I didn’t eat brunch until noon- we slept in because one of the kids got glutened, so I wasn’t up and around until 10, then I had to take a shower and do hair and make-up so I could do some filming for the membership site Thursday. So I ate much later than normal.
Thursday afternoon saw kefired nettle infusion and a handful of almonds.
Thursday’s dinner was roast chicken, squash casserole and salad. I had a spoonful of almond butter before dinner. Dinner was late and I was hungry.
Thursday’s evening snack was coconut oil peppermint squares and more nettle infusion.
Friday’s menu is planned as fried eggs again with a nut butter kefir smoothie, lunch is leftover roast chicken made into chicken salad with hard-boiled eggs, lacto-fermented pickle relish and lots of mayo. Dinner is grilled steak, salad and cauliflower. I’ll drink nettle kefir and water. If I’m hungry between meals, I’ll have some leftover squash casserole or coconut oil peppermint squares. If I’m hungry in the afternoon, I’ll drink a cup of chicken stock.

Could you share a bit about the nettles kefir? I like to drink a nettles infusion daily for my allergies…and just am getting started in water kefir. I make my infusion with a quart of water and 1/2 cup of nettles (too much herb? too little?) plus a spoonful of spearmint for taste.
Would appreciate knowing how you do it. Thanks!

Thanks for the detailed weekly meal plan. I love how you explained each day and the different things that happened that affected your eating and you just go with the flow. It’s encouraging for the rest of us “normal” people out here.
