Today is my birthday, and I am taking the day off to spend with my family. Due to technical issues with our old hosting company, the new website’s debut is going to take a few extra days. It’s all been out of my hands since this past weekend, I’m just waiting on them. So, while we wait for the unveiling of my birthday present to myself, how about a recipe? This is what we are having for my birthday dinner tonight.
Rich Salmon

1/3 cup tamari or coconut aminos
2 Tbs rapadura
1/3 cup water
¼ cup coconut/sesame/olive oil blend
4 salmon filets
salt
pepper
garlic powder
In a wide, shallow dish with a lid, combine the tamari, rapadura and water. Allow to sit until the rapadura dissolves and whisk in the oil. Add the salmon filets and turn to coat. Cover and marinate for 2-4 hours.
Preheat the oven to 425 degrees. Remove the salmon from the marinade and place the fish, skin side down, in a single layer in a 9×13 pan. Discard the marinade. Bake until the fish flakes easily with a fork. Baking time will depend in the thickness of your fish, the general rule of thumb is 10-12 minutes per inch of thickness.
If you’d rather, you can grill this first over medium heat for 6-8 minutes per side.
