Crock-Pot Rice Pudding

Most people think ‘main dish’ when they think of a crock-pot.  But there are many side dishes, dips, desserts and even drinks that can be made in your slow cooker.

I like crock-pot desserts for Fridays I know I’m going to be tired.  For me, that’s just about every Friday during the school year.  It means all I have to do after dinner is dish up dessert instead of having to fuss with something on the stove when the kids want a hot dessert in the Fall and Winter.

Crock-Pot Rice Pudding
From the Menu Mailer

Hands-on: 10 minutes
Hands-off: 30 min at a time

2 cups coconut milk, dairy milk, cream, or a combination
2 cups water
¼ cup raw rice
¼ cup minced, dry fruit
2 Tbs rapadura
2 Tbs coconut oil, butter or ghee
¼ tsp vanilla extract
Dash cinnamon
Dash salt

Grease the crock-pot, add all the ingredients and stir to combine. Cover and cook on high for one hour. Turn to low, check and stir every half-hour until the pudding is the consistency you like. Total cooking time will be determined by how hot your crock-pot runs, what shape it is and how much it holds. Recipe can easily be doubled or tripled.

  • This is what love looks like. With the exception of the lip balms and Monin syrups which I purchased and had sent to my moms house before we had to leave our home, all of these items have been purchased for us by friends who are helping us through this crisis. It’s all basics and necessities. Clothing, shoes, personal care. Sheets and bedding. Kitchen items, towels. And it is a BLESSING!  Losing everything has been so tough.
